OWNER/OPERATIONS

8th Day started because this dorky engineer wanted to make whiskey. Working for cooperate America, Matt talked to his piers and older mentors asking the number one thing they looks forward to the most and most everyones response was “To retire and be done here.” Matt knew that journey wasn’t for him so as he traveled for his cooperate gig he visited breweries and distilleries on the west and east coasts.

Matt has a passion for tinkering and building things so he got to work, went to Purdue where they helped develop a business plan and jumped off the ledge in 2015 (of course with his wife Jaime help). He worked two jobs until January of 2020 where he decided to leave cooperate America and focus solely on 8th Day.

In 2015 we signed a lease and started making spirits socking away whiskey and launching with Gin & Rum. The Bottle Shop & Cocktail bar opened in 2018 and Matt started hiring more team members to help distill.

Matt oversees operations, financial, and is the integrator of the business. Without Matt 8th Day wouldn’t be.

Matt enjoys a good work out, grilling, hanging at home with the fam, and being a rockstar dad!

OWNER/SALES & MARKETING

Jaime has been a part of 8th Day since before it came into fruition. She pushed Matt off the ledge and gave the green light to get things going. Jaime worked as a Dental Assistant until April of ‘22 then stepped away from the dental world to focus just on 8th Day full time.

Jaime manages the front of house team, schedules music, trivia, private parties, and all other things happening at 8th Day. She is also the “bar mom”. You can sometimes catch her behind he bar, but its not too often anymore given the awesome team 8th Day has built.

She enjoys being with family and friends, going out to all the foodies places in Indy, traveling, and being a mom!

She and Matt make a good team complementing each other, filling the the gaps each one lacks, and making sure that family and team are priority. She is beyond blessed to have a business that has created such. strong community!

DISTILLER & PRODUCTION COORDINATOR

Gavin is another distiller and oversees all things distillation. He also spearheads the R&D department helping scale up all of our crazy cocktail, mocktail, and bottle ideas. Gavin joined the team in summer 2019 where he started out shaking cocktails. He has been distilling since Fall 2020 loving every minute of course.

Gavin loves to ride his bike, hang with family and friends, play games, and enjoy local spots esp on the near Eastside!

DISTILLER & BARREL/WAREHOUSE MANAGER

Phil joined with team in 2021. He is one of our distiller and manages all barrel inventory. He is such a hard worker, enjoys a good conversation, and truly loves this team and his family.

Phil loves spending time with family and friends, projects at his house, and if your lucky you can catch him doing the splits! Yes thats right, he can do the splits!

BOTTLING, CONTRACT & WAREHOUSE

Owen joined the team at 8th Day in July of ‘22. He is actually Gavins little brother. Owen bottles, pulls barrel samples, and helps curate products going out and barrels coming in. Owen enjoys family time (they all live in the same neighborhood), riding his bike, gaming with friends, and of course drinking 8th Day! He is funny and witty and the tallest on the team.

BOTTLING, CONTRACT, & WAREHOUSE

Octavia is such a kind soul. She joined the team end of February 2023 and is Olive’s girlfriend. She works the bottling line, packaging, pulling samples, hustling with shipping out products and making sure everything is accounted for.

Octavia enjoys hanging with close family and friends, being at home with her girlfriend and animals, and gaming with friends.

SALES & EVENTS

Kayla started out behind the bar at 8th Day in 2018 shaking cocktails. She now hustles selling our spirits to local bars, restaurants, and liquor stores while working some off site events and cocktail classes. She is creative, passionate, and a ray of sunshine!

Kayla is a Physical Therapist and enjoys hanging with her hubby, dog, family and friends! She loves to garden and bake bread/sweet treats as well as cocktails and mocktails at home!

BAR MANAGER

Kayleigh has been a patron of 8th days for a while now. She was a bartender turned bar manager and has been with the team since Fall 2022. Not only is she creative, expressive and always on time, she loves the craft of this industry. Kayleigh takes pride in showcasing how our spirits and cocktails are portrayed. She loves climbing, her woggles (cats & doggies) and being with friends and family enjoying a local spot in our city!

SOCIAL MEDIA MANAGER/BARTENDER

Adrienne has been with the 8th Day fam since December 2021. She started out as a bartender quickly shifting to bar manager. As her family continue to grow she shifted rolls to have more of a work/life balance and be able to do some work at home with her littles.

She is such a joy and loves this city, local spots, and so proud of 8th Day, her family, and her family and friends. She enjoys spending time with loved ones, snuggling up at home, candles, and a good pair of earrings!

MARKET ORGANIZER/BARTENDER

Olive joined the 8th Day team in Summer ‘23. Olive is creative and super artistic. Have you seen our chalk boards these days, they are amazing! Olive loves to craft cocktails turning a simple ingredients into flawless flavor bursting cocktails. Aside from being at the bar, Olive is in grad school majoring in Art Therapy. They enjoy being with friends, hanging with their girlfriend, and a good food spot. Did I mention they are one of the most organized people, they love a good spread sheet, lol!

BARTENDER

Jalen has been supporting 8th Day since we first opened Summer of 2018. She was patron turned bartender in Summer 2021. She is full of wisdom, strength, and infectious laugh and smile.

Jalen works for a non profit, Beast Burgers, and 8th Day. She is a people connector always spreading the good word of local businesses. She enjoys local spots, sipping on good craft beverages, and hanging with her friends who love and support all the things J does!

BARTENDER

Mia joined the team in August ‘23 but it feels like she just fit right in and has been with us since day one. She is such a ray of sunshine with a smile constantly on her face. She takes pride in doing a job and completing it correctly and efficiently. Outside of being behind the bar she drones, takes dance lessons, and loves to be with friends. She is back in Indy after traveling for a while and is loving reacquainting herself with the Indy scene.

BARTENDER

Mirra joined the team in early summer ‘23. She is a shorty like the owner Jaime. She is so elegant while crafting a cocktail. She takes flavors from all over the world and creates the perfect experience while you imbibe. She is sweet as ever and took a semester off of 8th Day focusing on grad school, but now she is back with the 8th Day fam and we couldn’t be happier! She also loves art, having a creative outlet, hanging with her sister who lives in Indy as well and trying all the local Indy spots.

BARTENDER

Kendra started with 8th Day beginning of ‘23. She is so sweet and loves to shake cocktails. She has a 9-5 so 8th Day is her creative outlet and loves getting to know our regulars and patrons. She is part time with 8th Day in case you haven’t caught her behind the bar often. She loves hanging with family and friends and being with her boyfriend and doggies.

BARTENDER

Laura joined the team Fall ‘23. She is quiet and shy but the sweetest ever. Laura is part time with 8th Day but loves having a creative outlet and learning new skills. She works for the Nature Conservatory and knew Kayleigh prior to joining 8th Day. She loves crafting, hanging with family and friends, and being at home cozied up with a blanket!

PHOTOGRAPHER

Grant happens to be married to Matt’s sister, so he has been a part of 8th Day since he joined the fam in 2018. Grant loves coming to 8th Day’s shakedowns where he takes photos and videos of the team crafting & creating cocktails to formulate our menus. Grant has a company for video and drone work too if you need a guy! He loves laking all summer long at Crooked Lake, hanging with family and friends, blackstoning, using his new pizza oven, and being a dad!

DESIGNER

8th Day and Aaron met through mutual family & friends back in 2013. Aaron started design work for 8th Day in 2013 when 8th Day was just an idea while working on getting our LLC. Aaron has made 8th Day look good ever since. He is the brains behind labels, logos, and all the creative branding for 8th Day.

Aaron is an amazing artist and creates pieces for a lot of local and national brands. We love Aaron so much, and Aaron loves whiskey so much, we collabed on a mash bill and did a special Rye just for Aaron and his brand Ronlewhorn.

Aaron also enjoys time with family and friends, being with his wife AJ, and supporting local arts, foodie spots or enjoying a craft cocktail or beer. His pups love to venture around Indy too. If you need some branding, illustration or just to have a good conversation, hit up Aaron!

BARREL BEAST

We adopted Cino in late 2020. She was just a kitten when she joined the team and makes sure everyone knows she is around. She is the most people kitty I know and loves all the attention and treats. Cino hunts birds that fly in the distillery or a mouse or two running around the building. She loves when the team is around to give her all the love. Cino is an icon at 8th Day and everyone that has come to 8th Day always wants to see or pet her! Can you say spoiled?
